Our Collection of varietal wines capture the heart and soul of the magnificent diversity of “terroirs” present throughout the Languedoc. We use both tradition and innovation to express the true essence of the grape varietal.

Jancis Robinson MW - 15.5/20 “Quite mild and melony on the nose. Less obvious acid than many Limoux Chardonnays. Hint of sweet alcohol on the end.”
Matthew Stubbs MW - “Fresh, clean, cool-climate style Chardonnay. A mélange of citrus and tropical fruit with a creamy texture from some expert oak handling. Chablis with attitude.”

Tasting notes
Appealingly floral and fruity on the nose. Toasty, stone fruit, mineral with good weight and depth on the palate. Fresh finish.

Vinification process
Pneumatic Press, Cold Settling, 20% fermentation in one year Oak barrels and 80% fermentation in stainless steel vats between 14°C and 16°C

Vineyards
Minervois (Limestone plateau), Malepère (Sandstone)

Ageing
On the lees with “Bâtonnage” during 6 months for the barrels – Blending and Bottling.
