“Honeysuckle and citrus blossom lead into clean, plump apricot and peach, with some rounded texture from bâtonnage and a subtle toasted hazelnut character from the portion of the blend, around 20 to 30 percent, that sees some one-year-old oak.” The Buyer (DK), February 2021

Tasting notes

Sparkling, pale yellow colour with green reflections and a great brilliance. The nose reveals a masterful ageing, which delicately supports this Chardonnay, with a few touches of vanilla bean. The palate is lively and fresh, with citrus aromas which then give way to a few hints of vanilla, covering the palate with elegance. This fine and complex wine also develops some aromas of verbena infusion and white pepper. Finally, the finish gives the impression of biting into a lemon caviar ball and continues with finesse, on some aromas of bitter almond.  

Vinification process

Pneumatic Press - Cold Settling - 20% fermentation in one year Oak barrels and 80% fermentation in stainless steel vats between 14°C and 16°C

Vineyards

Minervois (Limestone plateau), Malepère (Sandstone)

Ageing

On the lees with “Bâtonnage” during 6 months for the barrels – Blending and Bottling.
