
The story goes...
For the 2017 vintage, we have chosen the Mourvèdre from the limestone terroir of La Livinière.
A rigorous selection takes place during the harvest. Vinification is with whole-bunch grapes, pressed by foot, and without sulphites.
This technique allows the grape variety to express its full aromatic potential and gentle extraction of tannins.
A balancing act!

Tasting notes
An elegant example of Mourvèdre, focused and complex sweet black cherry and berry notes with a peppery edge. Ripe yet fresh with good structure and acidity. Some lovely grainy tannins that remain subtle and in the background giving it a good grip.

Vinification process
Hand picking in small crates - Natural vinification without sulphites in wooden tank barrel - Pressing of whole bunches by foot - Punchdown - 4 weeks on the skins before pressing - Bottled at the Domaine
