Full bottle 1,137 g. Certified Ecocert organic. 60% Muscat, 40% Roussanne. Muscat from high-altitude, clay-limestone vineyards in Roussillon, and Roussanne from high in the Minervois grown on schist soil. The Muscat is vinified in a mixture of stainless-steel vats and clay vessels, the Roussanne in stainless steel. Grapes are pressed slowly in whole bunches, vinified without sulphite additions at low temperature and aged on lees.
“Bravo for the light bottle. Apricots and white orchard blossoms and that first sharp-green baby sorrel leaf – this wine tastes like a gulp of cold spring air complete with blue sky and high, white, scudding clouds. Makes you want to feel alive again after the thick dark welter-weight of winter. Lemony bite and a sorbet-crunch of white grapefruit. Makes me want to go outside and breathe deeply with my arms flung wide”. (TC)
