Estate built in 1749 as a coaching inn.
Since then, a restaurant, cellar and boutique have been built on the estate.
Domaine Gayda is passionate about the traditional grape varieties grown on the many soils and climates of the Languedoc. Varieties such as Cabernet Franc and Chenin Blanc were planted on the farm of origin, where the climatic influences of the Atlantic allow these imported varieties to flourish. While the vineyards are firmly rooted in tradition and “terroir”, the winery itself is driven byinnovation, with investments in all the latest equipment and technologies.

Figure Libre has created a range of wines that challenge conventional codes in a bid to break new ground in Languedoc and Roussillon.
Far from the rules of the appellation, the domaine allows itself every freedom in the choice of grape varieties, whether single-varietal or blended.
This range is the audacity of bringing together grape varieties in a bottle that should never have met.

100% chenin blanc

Winemaking process :
Harvested in 2 batches. (10% noble rot)
Long, gradual pressing
Natural fermentation in ovoid concrete tanks
The shape of the egg, according to the golden ratio, means that the wine is in perpetual motion, bringing out its roundness while preserving the purity of fruit and freshness.

Wine and food pairing :
Aperitif, fish marinated in citrus fruits, goat’s or ewe’s cheese, fruit dessert

Tasting notes
Golden color with green highlights.
Floral and fruity nose.
Orange blossom and fruity citrus aromas.
Freshness and minerality on the finish.

Grenache Blanc 50%, Maccabeu 25%, Marsanne 15%, Roussanne 10%.

Wine-making process
Hand-picked, bunches sorted, destemmed, no crushing
Pneumatic pressing (except Grenache)
Natural fermentation in ovoid concrete vats for Marsanne and Grenache, and in barrels and demi-muids for Roussanne, Grenache and Maccabeu.

Food and wine pairing
Aperitif, mixed salad, risotto, fruit

 

Tasting notes
Attractive golden color, aromatic nose of white fruit and honeysuckle. A rich, complex palate with a hint of oak and clean acidity.

Syrah 68%, Grenache 28%, Cinsault 4%.

Wine-making process
Low-yielding vines, hand-picked, hand-sorted grain by grain
Traditional winemaking
21 months in barrel: One-third Syrah in new Burgundy barrels for 9 months. Grenache and Cinsault in demi-muids and foudres for 9 months, then blending of the best barrels of each grape variety, followed by 12 months’ ageing of the final blend in the same containers.

Food and wine pairing
Perfect with lamb, vegetable tian, cheese platter

Tasting notes
A garnet-red color, with an expressive nose of black fruits, pepper, cinnamon, spices and violets. On the palate, we find forest fruits, a blend of fruits, spices and mineral nuances.

Wine-making process
They let themselves be guided by the taste and aromas of the grapes when harvesting and making wine, so that the quality of the fruit expresses itself freely in the wine -Vinification Naturelle
20% in new barrels, 20% in wooden vats and 60% in 1- and 2-wine barrels – The wines are racked and bottled on the waning and waning moons, as well as on fruit and root days.

Food and wine pairing
Red meat, world cuisine, game.

Tasting notes
Purple and opaque, with aromas of paprika, blackcurrant and black cherry. A full-bodied wine, with flavors of blackberry and cedar.

In used barrels for nine months on lees with stirring – Blending of the best barrels from each terroir, then 2 months in vats – No fining – Light filtration – Bottled at the estate.

Aperitif, grilled meats, vegetables stuffed with goat cheese, cheeses

Tasting notes
Ruby-red with purple tints. A very expressive nose of red and black fruits, pepper and spices. A full-bodied wine with light tannins
