The harvest began at Gayda with the grapes for our Figure Libre wine. Syrah and Grenache, both from Livinère. The rigorous process of grape selection has already begun. Grenache Blanc, the main grape variety for this wine, is left in vats for 24 – 72 hours before being gently pressed, and then fermented in oak barrels.

We also received a concrete fermenting egg. There are three main reasons why we chose to use concrete instead of oak or stainless steel; firstly, there’s no flavor in concrete. Secondly, concrete should create a greater degree of temperature control during fermentation. Finally, the egg shape gives us the possibility of constantly shaking the lees. We hope that our Figure Libre Maccabeo will benefit from this new process, which will enable this often underestimated grape variety to further reveal the exceptional granite terroir of St Martin de Fenouillet.
