Tasting notes

A deep burlat colour with captivating purple highlights. On the nose, bewitching freshness mingles with a delectable complexity. Aromas of black berries, such as blackberry and blackcurrant, are accompanied by a subtle floral essence of violet. The spicy notes of pink peppercorns add a fresh dimension to the bouquet. On the palate, the attack is smooth and concentrated, in perfect harmony with the promise of the nose. The texture is velvety, the tannins perfectly enveloping, offering a sensation of fullness on the palate, while providing structure and elegance. The finish is spicy, strongly reminiscent of black pepper, but also pleasantly prolonged by subtle hints of roasted cocoa.

Vinification process

Cold soak for one week - Natural fermentation for 50% 26° to 28°C and 50% inoculated fermented at 22°C to 24°C followed followed by a week of post fermentation maceration prior to pressing

Vineyards

La Livinière (Limestone) 80%, Roussillon (Slate) 20%

Ageing

10% in 3 year and more oak barrels for 9 months – 90% in vats on fine lees for 9 months – blending and bottling.
