Tasting notes
An intense burlat cherry colour with deep violet highlights, an immediate eye-catcher. The fresh, bewitching nose reveals aromas of black fruits such as blackcurrant and blackberry, accompanied by notes of coffee bean and mocha. Behind this deliciousness lies an intense freshness, marked by 5-berry pepper and violets. On the palate, the wine is generous, persistent and deep. The Zan and mocha aromas continue, enhanced by hints of black fruit. The freshness is remarkable, offering a unique personality and a fine expression of Syrah, with a deep, elegant structure.
Winemaking process
Pre-fermentation cold maceration for one week - Natural fermentation for 50% from 26° to 28°C and 50% fermented from 22°C to 24°C followed by one week of post-fermentation maceration before pressing.
Vineyards
La Livinière (Limestone) 80% - Roussillon (Slate) 20%
Ageing
10% in 3-year-old barrels for 9 months - 90% in vats on fine lees for 9 months - Blending and bottling.
