Tasting notes

The deep, intense black cherry color captivates with its beautiful brilliance and vibrant purple highlights. The nose, remarkably generous, reveals aromas of blackcurrant, Burlat cherry, and fresh blackberry. Upon aeration, the bouquet gains complexity with notes of pink pepper, a delicate hint of roasted coffee, and an almost minty nuance of eucalyptus that lends great elegance and freshness. On the palate, the soft, silky attack opens with black fruit before evolving into a more persistent and structured body, enhanced by notes of coffee beans and blond tobacco.

Winemaking process

Pre-fermentation cold maceration for one week - Natural fermentation for 50% from 26° to 28°C and 50% fermented from 22°C to 24°C followed by one week of post-fermentation maceration before pressing.

La Livinière (Limestone) 80% -  Roussillon (Slate) 20%

Ageing

10% in 3-year-old barrels for 9 months - 90% in vats on fine lees for 9 months - Blending and bottling.
