Tasting notes

Vibrant light red colour with purplish highlights. The nose opens with intense notes of blackberry, blackcurrant and black plum, evolving towards liquorice and pepper notes on the nose, as well as a few hints of violet. The attack on the palate is rich, with aromas of black fruit and peppermint, giving it freshness and complexity. The whole is well-balanced with a finish of spices and liquorice.

Vinification process

Cold soak for one week - Fermentation at 20°C - Pressing before the end of fermentation to maximise the fruit profile and more roundness

Ageing

In tank and on lees to maintain the fruit and to give more smoothness.
