LA MINUETTE – A SPRINGTIME ROSÉ FROM DOMAINE GAYDA

Once upon a time, an estate – Domaine Gayda settled in the Aude, in Brugairolles to be precise, on land made for vines, where the wind blows and the sea breezes and the sun beats down intensely, at the foot of the Pyrenean hills, just a few wings’-widths from the Cité de Carcassonne, at the heart of history, on a terroir that has seen some fantastic rides, a terroir flown over by the first airmail planes. The Domaine was originally a post house where travelers and horses could rest. Since then, the land has seen many owners, and today it belongs to Tim Ford and Anthony Record, in partnership with winemaker Vincent Chansault, are the new faces. and a new venue for accommodation, relaxation and wine tasting. Traditional grape varieties – Cabernet Franc, Chenin Blanc… – have been replanted, but tradition and terroir coexist harmoniously with innovation in equipment and techniques.

Today, we’re drawn to a rosé that lives up to its name, a pale-tinted rosé that rhymes with large, friendly family gatherings, in the shade of a fragrant trellis or under a starry sky. La MinuetteBeyond its color, obtained by light pressing, we drew inspiration from Bandol and its king grape variety to vinify this cuvée. Mourvèdre accounts for 60% of the blend, alongside Syrah, Grenache and Cinsault”. says Vincent Chansault. The wine maker and co-founder of the domaine in the 2000s, worked this wine like a white, juggling acidity and smoothness from organically grown grapes on the limestone terroir of La Livinière.

From the vine to the rose, La Minuette is born – a delicate floral nose, citrus notes, a fresh, mineral palate and a gourmet finish… an exceptional rosé with a charming name, a tribute to Tim Ford, the estate’s owner. A globetrotter, he arrives from South Africa, where he planted and produced roses, including the La Minuette variety. Today, he cultivates vines in the Minervois region, and “La Minuette” roses grow majestically at the ends of the vine rows!
