Tasting notes

A pale yellow colour with silver highlights, marked by finesse and luminosity. The expressive and charming nose opens on fresh apricot, complemented by delicate notes of Corsican clementine that bring a sun-kissed freshness. On the palate, the soft and rounded attack unfolds into flavours of orange, before revealing a gentle grapefruit bitterness on the close. The  finale is elegant and persistent, lingering on subtle liquorice root notes, that extend the tasting with freshness. A delicate and well-balanced Viognier.

Winemaking process

Cold soak for the schist vineyards for 48 hours in vat prior to pressing - Pneumatic press - Cold settling - Fermentation in vats between 12°C to 18°C

6 months on fine lees before blending and bottling.
