Tasting notes
Pale yellow colour with silvery tints and a beautiful brilliance, evoking a delicate, refined wine.
On the nose, subtle scents of citrus peel, white flowers and wild meadow cumin leaves, both minty and aniseed, offer an elegant, complex aromatic palette.
On the palate, intense notes of Williams pear mingle with the refreshing vivacity of yuzu peel aromas, offering a delicate taste experience. The finish is long and lingering, with subtle aromas of bitter almond.
Vinification process
Cold soak for the schist vineyards for 48 hours in vat prior to pressing - Pneumatic press - Cold settling - Fermentation in vat between 12°C to 18°C.
