“Honeysuckle and citrus blossom lead into clean, plump apricot and peach, with some rounded texture from bâtonnage and a subtle toasted hazelnut character from the portion of the blend, around 20 to 30 percent, that sees some one-year-old oak.” The Buyer (DK), February 2021

Tasting notes

Sparkling pale yellow colour with hints of silver, showing great finesse and maturity. On the nose, delicate aromas of Granny Smith and royal jelly mingle with notes of macadamia nuts and vanilla. On the palate, a lively, fresh attack with citrus notes gives way to a buttery, tangy sensation, the result of ageing on the lees and perfect control of maturation. An unexpected freshness for a vintage marked by heat, underlining the elegance and complexity of this Languedoc Chardonnay.  

Vinification process

Pneumatic Press - Cold Settling - 20% fermentation in one year Oak barrels and 80% fermentation in stainless steel vats between 14°C and 16°C

Vineyards

Minervois (Limestone plateau), Malepère (Sandstone)

Ageing

On the lees with “Bâtonnage” during 6 months for the barrels – Blending and Bottling.
