Gayda-Sphère, an immersive journey to the heart of Languedoc

Between tradition and innovation, the new range of varietal wines, Gayda-Sphère, captures the heart and soul of the diversity of terroirs found throughout the Languedoc.
Composed of 2 red and 2 white wines, Gayda-Sphère expresses the true essence of each grape variety. Each cuvée in this collection of single-varietal wines is a unique representation of the heart and soul of the remarkable vineyards that Domaine Gayda, the dynamic Aude-based estate, cultivates with passion.
From the limestone terroirs of La Livinière to those of Malepère and the schists of Roussillon, each cuvée is a voyage of unprecedented flavors.

Cuvée Viognier: from the limestone terroirs of the Minervois and aged on fine lees for six months, this is a varietal wine that stands out for its originality.
Its fennel nose is quickly joined by aromas of fresh apricot, bergamot, quince and beeswax. On the palate, the wine surprises with its freshness and intensity, offering aromas of acacia and lime and evolving towards notes of citrus peel and bitter almond.
Goes well with: fish ceviche, scallop carpaccio with citrus fruit, grilled fish or fish in sauce, pasta with spider meat, shrimp tempura, poultry, goat’s cheese…
Cuvée Chardonnay: from the limestone soils of the Minervois and Malepère regions, this 100% Chardonnay is partially aged in barrels for six months.
On opening, it reveals a delicate nose with subtle notes of vanilla bean. Fresh and lively on the palate, citrus aromas give way to hints of vanilla. The complex finish offers refreshing notes of caviar lemon, preceded by bitter almond.
Pair with: a seafood platter, millefeuille of sea bass rillettes with yuzu, baked sea bream, blanquette of frogs’ legs and cheeses such as Ossau Iraty, Camembert, Brie…

Cuvée Syrah: from the limestone terroirs of La Livinière and the schist terroirs of Roussillon, this 100% Syrah gives off a complex bouquet of blueberries, blackcurrants, violets and peonies, with underlying notes of black pepper and licorice. On the palate, this is a full-bodied, well-balanced wine, structured by light tannins and endowed with remarkable length.
Pairings: pork filet mignon with bacon, prime rib with mushrooms, roast guinea fowl with vanilla, duck breast with figs…
La cuvée Grenache: from the limestone terroirs of the Minervois and the schist of the Côtes Catalanes, this 100% Grenache gives off pronounced notes of black fruit with subtle hints of liquorice and pepper. A rich attack on the palate, carried by aromas of black fruit and peppermint. Fresh and complex, it evolves towards a spicy, liquorice finish.
