The pale yellow color with silvery highlights captivates with its brilliance and beautiful clarity. The expressive and elegant nose reveals aromas of apple and ripe apricot, accompanied by delicate hints of fresh almond and white flowers that lend finesse and freshness. On the palate, the fresh grapefruit attack immediately balances a full-bodied, indulgent texture. The round and generous mid-palate then gives way to flavors of green pear, white peach, and lime zest that prolong the sensation of freshness.The deep, lingering finish reveals a particularly interesting chalky texture, showcasing the full minerality typical of the Minervois’ limestone soils.
Grapes are pressed slowly in whole bunches - very gentle racking - vinificaton without sulphur, at low temperature - ageing on lees.
