This project was born of the desire to elevate our beautiful vineyards of the Roussillon and to celebrate the Catalan heritage of the terroirs.

Tasting notes
Bright, pale yellow in colour with a fine and delicate nose, built on notes of beeswax, lemon and white fruit. The fine grain of the oak imparts a beautiful minerality. The palate is round, slightly creamy and quickly counterbalanced by a good tension. On the finish, it gives a very slight hint of almond kernel, mingling with a mouth-watering salinity. An expression of a terroir adding to its underlying minerality.

Vinification process
Field selection and picking in small crates – Carbonic maceration for 10 days – Whole bunch pressing – Natural vinification without sulphites in concrete egg tank and 500L barrels

Soil Type : Granitic sand / Commune : Saint-Martin-de-Fenouillet, Roussillon

Ageing
Ageing on full lees for 9 months – Racking off lees for clarification in tank – Bottled at the Domaine
